Mango Salsa - easy

2 medium mangos, ripe and juicy - peeled and cubed
1 medium ripe tomato, chopped
1 TB ginger, ground into small pieces
1/2 cup onion, chopped
1/4 cup fresh cilantro, chopped
1/4 cup fresh mint, chopped
2 tsp jalapeno pepper, chopped
1 tsp honey or agave syrup
juice of one lime, to taste
1 tsp rice wine vinegar
sea salt, to taste

Mix everything together and refreigerate for at least an hour before serving.

Any idea how long it lasts in the fridge if you were to make a bunch ahead of time?


WOuld it be freezeable do you think?

Not entirely sure. It never lasts long in my house. I don't make large amounts of it at a time.

I would imagine it would be freezable. I know I see mangoes in the freezer section of the dessert aisle...

You could also can some.
